What you'll do

You will cook with one of the chefs representing the gastronomy of Puebla and you will learn firsthand how to craft the famous mole poblano, with local and seasonal products, you will distinguish each and every one of the ingredients that make up this great dish, starting with different types of chili peppers, seeds, nuts and of course metate chocolate that is made with cacao , sugar and cinnamon to mention some ingredients, we will toast the ingredients in comal and it is milled in an ancestral way in mill which is a few steps away from the workshop and it will provide a unique flavor to history, we will cook under fire under the mole and during this time you can taste our famous seasonal waters based on fruits or herbs, we will also prepare the turkey to accompany it with our poblano molito and the Mexican rice that is as this delicacy is traditionally served which is served with handmade tortillas. For a few hours you will experience the authentic and traditional way of our gastronomy

I am Alán Sánchez, chef and founder of Teoxintle.taller, I have won several awards nationwide, being the last Best Chef 2018 by the world-renowned Food And Travel magazine, I am located in the beautiful city of Puebla and I have been related to gastronomy since my childhood because I went to the local markets for the raw material in the company of my grandmother and mother, currently in Teoxintle I dedicate myself to disseminate Mexican cuisine specifically the poblana where I make visits and purchases in local markets, I support the sustainability, I use native products and from our region, I cook wood and grind the mole and corn in local mills to capture and transmit that flavor to tradition and history in our dishes, my teaching experience will make your workshop a unique and wonderful experience.

Where you'll be

We are located in Cuautlancingo, a small town in Puebla which is 25 minutes from downtown Puebla, here we have our workshop which is a professional kitchen and this is where we perform the magic of spreading our knowledge, the atmosphere is relaxed in where you can visit the local market, see corn mills and enjoy with us a day of good gastronomy and make new Friends.
