What you'll do

Did you know that a specialty called "croissant" was imported from Vienna by Marie-Antoinette when she came in Versailles to marry Louis XVI ?

Of course, the croissant recipe has slightly evolved since 1770, but croissants are still named "Viennoiseries" after the birthplace of the famous queen.

In this "hands on" experience, you will get to learn how to make (today's ) viennoiseries (croissants and pains au chocolat) from scratch, and then, you will be invited to sit down in the dining room of our french home in Versailles to enjoy them with a hot chocolate or a coffee exactly as Marie-Antoinette used to do it here more than 200 years ago !

With your hands, simple ingredients and baking tools, you will be invited to mix, knead, roll, fold, and stretch...until the dough is ready to be baked and turned into a golden puffed and flaky treat.

Emmanuelle will be at your side to guide you stage by stage and teach you all the secrets of making this symbolic French pastry. At the same time, it will be an opportunity to learn about French way of life and get an authentic glimpse of the country !

I grew up, studied Economics, but after a few years in an office, I decided to return to my early passion and to learn French pastry in Paris.

Then, I started to host tourists in my Parisian apartment to share with them my love for cooking.

I moved to San Francisco and lived there for a few years. As I was missing my French bakery there, I decided to start making my own croissants and as passing on my 'savoir-faire' is an other passion, I started to teach my friends and become an hostess for Airbandb experience.

Now back in France , I am looking forward to sharing with you this moment of baking and of tasting this famous delicacy which is part of my French culture.

Where you'll be

After meeting at the corner of my road, next to Versailles Rive Droite train station, we will walk to my house. We will be baking the croissants in my home kitchen, and then, if you wish it, we can either sit outside the garden and enjoy the croissants with a drink or the house if you prefer.

Loved this experience. I have always wanted to try making croissants and now I feel like I can do it on my own. If you have a decent level of baking experience I’d say this experience would be better, but I think even the novice baker could do it. Emmanuelle was very kind and had many helpful tips. She even let us fill in some extra time by showing us how to make almond filling for almond croissants.

What a lovely time learning to make croissants with Emmanuelle! She structured the experience so that we were able to do the whole process from mixing the dough to baking (and then eating!) the croissants, but because the dough needs time to rest/rise in between certain steps, the actual steps were done out of order. Emmanuelle gave us a printed recipe with all the steps in order, which helped a lot. My wife and I know our way around a kitchen, but it was still helpful to have Emmanuelle there because there are a number of tricky steps where it's hard to describe, for example, exactly how thick the dough needs to be and how to check for butter breaking through. We made plain croissants and then tried a few variations, including pain au chocolats and cheese croissants. In the end, they were all delicious!

Grandma and college-aged son participated in croissant making class. Grandma couldn't stop raving about the experience and how wonderful Emmanuelle was. Extra baked good to bring home. Such a unique experience. Highly recommend!
