What you'll do

During this hands-on cooking class we will make:
- BIGOLI WITH PASTA EXTRUDER, an ancient Italian fresh pasta made with a pasta extruder that I brought in my luggage from Italy. The pasta dough is made with durum wheat flour and eggs and it is extruded by a special pasta machine called Bigolaro designed in 1604. The bronze die is used to create the best quality pasta that you will not find at any American restaurants.
- PESTO SAUCE WITH MORTAR AND PESTLE, the authentic sauce from Genoa. This sauce is fantastic with any kind of pasta. Learn how to choose the right basil for pesto, the perfect Italian extra virgin olive oil, the best quality Parmigiano Reggiano cheese from Italy etc. I will teach you all the tricks to make a creamy and super tasty Pesto from scratch that only the Italian chefs know.

A homemade Italian appetizer will be served too as a complementary dish.

Where you'll be

The cooking class will take place at my cooking school -home kitchen in Edmonds. The beautiful city is 14 miles North of Seattle. You can then visit downtown, port and parks.

Having taken cooking classes before, we had pretty high expectations for what seemed to be simple dishes. Rossella exceeded those expectations. She was warm and welcoming, had vast personal knowledge, and was patient with our questions. Would sign up for another experience with Rossella in a heartbeat.

Rossella was knowledgeable, kind, and helpful! Her home is beautiful and she was very welcoming. The food was to die for, but my favorite part was learning about old traditions and origins of the dish. I learned a lot and had a great time. Would recommend this to anyone who likes cooking, food, and/or learning about other cultures. I'll probably book the pizza class with Rossella in the future!

This cooking class was incredible!! Rossella made all of us feel so welcome in her space. She had everything prepared and welcomed us to feel comfortable and relaxed. She was extremely knowledgeable and shared stories about her experiences in Italy and with cooking. She took the time to share insights into how we could make this at home and little secrets to make everything taste amazing! We cannot day enough great things about this class and about Rossella. Highly, highly recommend. She even joined us in sharing a glass of wine and eating the pasta we made. It was wonderful!
