In our Trulli House we will teach you hoiw tyo do the typical Puglia's cheese in the same atmosphere and technics of our grandparents: the fresh ricotta and pecorino cheese during winter time and the cacioricotta cheese during summertime. We will reveal the old secrets of making cheese, they will represent the treasure you will take with you.
In Puglia we actually produce diffderent kind of cheeses, stricly connected to the season, so that what animals (cows, sheeps and goats) feed influences the kind of cheese.
A curiosity: the cacioricotta cheese prdouced during summertime is the typical cheese to eat with our Orecchiette, the typical home-made pasta.
The invention of cheese dates back to about six thousand years ago and Apulia became over the time the most important production center for Southern Italy.
We wil learn to warm the milk and will work the first cheese (cagliata) among telling our rich traditions and tasting our local dairy products.
A tradition that we will completly share with you!
Other things to note
This class is offered in a rural countryhouse, the typical Trulli. We suggest comfortable clothes.

Since early age, farms were our local supermarket for buying milk, cheese, fresh ricotta, strong ricotta and meat. We chose a farm or another for cheeses with different taste. "It's the grass that eat animals and the air that are different ..." my grandmother told us. And it was true.
Despite the few kilometers of distance in the countryside, in the marine area or on the hills, the cheeses had a unique and different taste. Each with its own "air", taste and softness ...

Where you'll be

Into our rural Trulli in the charming "Valle d'Itria" (Itria Valley), Unesco heritage, we will share with you a typical day as our grandparents did, to prepare and make the cheese.
A day spent in the countryside with our centenary olive trees.
We will also visit our Trully and we will tell about the history of this typical houses and the old way of living, that we have partly recreated.
Then we will manually "work" all together the cheese (different kind depending on season) that we will taste at the end of the class with other typical dairy products.

The cheese tour was amazing! We not only learned about the different types of cheese, but also learned a lot about herbs, olive oil/trees and the Italian history. We had a super nice time with making our own cheese! Simona is a very friendly and intelligent person and the experience was much wider than "just making cheese". She explained us about her way of living, how the cheese is produced (of course, we did it ourselves) and gave us many tips about the region Puglia. The tasting at the end was soo delicious and this experience is definitely worth the money! I can only recommend it :)
