I was born in Tapalpa, just like my father and my grandparents.
Since I was a child, I experienced the process of making artisanal cheese. My father paid for his studies at the Guadalajara University selling this delicious milk product.
My aunt Mary was one of the leading cheese sellers. She even had a waiting list for her orders!
For five years, I have been making cheese that is sold in several stores in Tapalpa and nearby towns. My cows are examined by specialists every 6 months, so the milk is perfectly healthy and of the best quality.
I am passionate about this activity because cheese has been present in human life for more than 5,000 years. In my case it is a tradition that I don’t want to lose.
