What you'll do
Let's start enjoy a coffee together. After that we are ready to wear the apron and start cooking our Piedmontese meal:-)
1.Preparation of Tajarin.
In Piemonte’s cooking, the preferred pasta is a narrow handmade egg noodle called tajarin (a must in my Trattoria). Let's making pasta from dough to the cut by hand. This is funny and challenging! (especially when accompanied by a good glass of wine;-)
*White Truffle from Alba available from October to February(for people who want to enjoy a WT Tajarin)
2. Preparation of One traditional Appetizer.
Piedmont’s cuisine is famous for the immense variety of antipasti. It is common for a meal to start with at least one antipasti and sometimes as many as 5 or 6. Appetizers change every season according to whats available at the local market!
3.Dessert is the sweetest part! Preparation of one traditional desert.
4. It's time to enjoy your meal. Let's choose together the best glass of wine for your lunch. Lunch is interactive: you can watch and participate in the cooking.
One glass of Wine is included in the experience. A wine tasting with explanation of traditional wines from the region is available for 15,00 euro (you can choose once you are here and pay by cash)

Bra is a small city of about 30,000 inhabitants, nestled in the hills of the Roero and the Langhe in southern Piedmont. In the 1980’s it became the birthplace of the Slow Food Movement.

Where you'll be
Our cooking class it will be in the kitchen of my trattoria. Trattoria " La Gallinaccia" is located in the city center of Bra. You will experience the feeling to be part of a kitchen team in a local restaurant. After the cooking class enjoy your meal like a guest while relaxing in the dining room.

We had a wonderful time with Mauri cooking a traditional piemontese menu. It was an amazing experience, also for our kids. They loved it. They want to buy a pasta machine for at home. Mauri is a great chef, making us feel very welcome in his kitchen and a great teacher. The 3-course lunch was delicious.

Mauri made my Mum and I feel very welcome. We were fully involved with the cooking of the appetiser, pasta and dessert and each dish was delicious. Mauri was very friendly and spoke very good English which made the experience very easy and comfortable. We ate the delicious food accompanied by local wines. We are now going to go home and buy a pasta maker!

My daughter and I spent a lovely morning in Mauri’s kitchen where we helped make our 3 course lunch which included making pasta. Mauri was a brilliant chef and a great teacher. I would highly recommend this experience - good value and Mauri made it very special.

Mauri is such a wonderful chef & teacher, and a warm and inviting person. I had been in the region for 3 weeks already when I took his class. Easily, it was the highlight of my time in Piedmont. He is warm, inviting and deeply knowledgeable of the sources of his ingredients, the region and, of course, the methods in creating the recipes. I left not only knowing I can make what I learned at home, but also inspired to look more deeply into the food grown and cooked around my home town. Mauri is a true life example of a Slow Food chef.
