What you'll do

You will join me in our rural home La Fesaye set in beautiful natural woodland in the national parc, Ardeche. Upon arrival I, Lottie, Chef d’cuisine, will welcome you with coffee, and tea.

A short introduction to fermenting & zero waste will follow. I will show you some examples too. Season permitting we will take stroll into the orchard /woodland to pick some ingredients. In winter months when there is less to pick we will focus on how to use your ferments creatively and share some cooking tips and ideas.

A tasty simple lunch of homemade delicacies local cheese and artisanal bread will be enjoyed and this will give you a chance to taste a selection of ferments, preserves and enjoy a deliciously fragrant kefir drink.

Lunch is followed by a kraut demonstration to help prepare you to make your very own ferment to take away with you. You will have choice of kimchi or kraut to make and I will support you fully in developing a ferment that is totally unique and delicious to you.
Other things to note
The experience is spoken in english. I am happy to organise translation in French if you need it. Please let me know beforehand so I can arrange this.

Be dressed in comfortable clothing and trainers or walking shoes. Bring a bag to take your goodies back with you.

Having been raised in the Netherlands and moved to London at the age of 20 back in the late 80’s, I found myself homesick and in need of comfort. I learnt, with the help of my Opa that I could feel at home anywhere if I connected with food from the heart, culturing my own traditions and making a taste if home. I have been fermenting and pickling since.

I work as a professional chef and I am passionate about reducing food waste and the negative impact of food production on our environment. I strive to use the whole vegetable or plant in creative ways and love to use fermenting, preserving and pickling techniques to do so. Whilst in UK I owned a cafe in East London and for several years, I served and shared my knowledge on the topic and love creating a waste-not community.

Where you'll be

This workshop will take place at La Fesaye, a 300 year old chestnut farm and our home near Burzet.

We will host the workshop in our kitchen for small numbers or our studio in the heart of our charming woodland..
