What you'll do

Firstly, we’re going to our apartment to learn the basics of chilis (peppers), species and the Mexican cuisine. You’ll choice the sauces that we’ll make, the protein and the drinks.

We’ll cook chilaquiles, it’s a typical Mexican dish based of corn tortilla cut in small triangles and usually fried in oil, covered with sauce and (optional) complemented with cheese, cream, onion, coriander and a portion of eggs, sausage or meat.

We’re going to a market near to Tacuba neighborhood, a historical and important place in the city. We’ll buy all the ingredients, then we’ll come back home to cook chilaquiles. During the process we’ll taste some sauces and Mexican food. Finally, and the most important step: Eating with friends and share our experiences with all.

Esaul is a great host, cook and person! I totally recommend this experience! The food is delicious and he genuinely cares for you to participate and learn... I’m Mexican but honestly I know nothing of how to cook even some of the most basic Mexican dishes, that’s why I looked for an experience to learn and this experience exceeded my expectations! This was a masterfully crafted experience. Esaul was very knowledgable and gave a good insight into Mexican Food culture. He was prepared and provided alot of information which he had notes from. Overall this was a great experience! The only other thing that would make it really over the top might be a pairing of Mexican wines that complement the different types of sauces being prepared.

I had an amazing experience with Esaul. He is a gifted teacher and facilitator. He used a variety of different ways of making the experience animated. He gave amazing and interesting information about Mexican cuisine (traditional mexican dishes and chills) and other really useful information about the history/architecture etc about Mexico. He used a variety of animated methods to give information across, diagram, pictures, leaflets etc. He is passionate about what he does and the whole experience was just a joy. After the information about the Mexican cuisine, we then went to the local market and bought all of the ingredients fresh for our dish which we cooked together later on. It couldn't have been more authentic and i learned so much about cooking, and the Mexican culture generally, from this experience.
