What you'll do
What you get out of a cooking class with me, is an Afternoon of Awesomeness™️.
We’ll pour a few drinks, play some music, put on wacky aprons, and cook an early dinner on my beautiful harbour-facing balcony. You'll get a crash course in the herbs and spices of the Indian subcontinent, and over the course of the afternoon, we'll cook a complete meal - appetiser, mains and dessert.
I will teach you basics like slicing an onion, and also some advanced techniques like flambéing a pineapple without losing even a single eyebrow.
One of the coolest things about this class, is that I cook a different menu every week. There are plenty of vegetarian and non-vegetarian options, and once you book, I'll get in touch to figure out preferences etc.
Here are some of my greatest hits:
- Chicken 65 / Cauliflower 65 - fun spicy appetisers from South India
- Butter Chicken - the most glamorous thing to ever happen to a chicken
- Dal Tadka - lentils with looks and money
- Bangin' Bharta - roasted eggplants in a tangy onion-tomato sauce
- Different kinds of Pilafs
- Dessert
- Hot water
You can also choose anything you like from my Instagram @madonionslicer, and we'll make it happen!
Other things to note
1. We're on the 36th floor. It's totally safe but if you have a fear of heights, you might want to think about that.
2. We live with a rescue dog named Freddie. He's not aggressive at all but beware of puppy eyes.

My name is Dhruv Shanker, but they call me the Mad Onion Slicer. I'm a former professional chef and am dead serious about having fun in the kitchen. Cooking is all about experimentation and simply having a good time. I’ve been cooking since I was 8 and learn something new in the kitchen every single day. I've cooked in several countries around the world—Jordan, Tanzania, North Korea—and believe that food is the greatest unifier there is.
I've been writing a light-hearted food blog for many years and teach people how to produce Indian food that’s simple to cook and absolutely delicious. Everyone who’s tried my recipes has survived to tell the tale!

Where you'll be
The class is conducted on my totally awesome 36th floor balcony overlooking the Singapore harbour. You'll see ships coming in and out, as you sauté your onions to perfection. You can cook AND Instagram your food like a pro!

I offered this experience as a birthday present and my friend absolutely loved it !
Dhruv was very welcoming, his place is just amazing and the cooking exercise was great ! He showed us very cool ingredients we dont typically use as well as India techniques we could easily use later on.

Dhruv’s Indian cooking class was the highlight of our Singapore visit. The beautiful kitchen on his balcony overlooking the harbor on the 36th floor was amazing. He had it all set up for us, we all had a chance to participate. We made a delicious biryani and a excellent curry. Highly recommend you take a class with Dhruv.

Dhruv is simply a great host and chef. Cooking on the 36th floor of his apartment with a great view and pleasant breeze was a most unique experience. Dhruv taught us to cook multiple Indian dishes and while we worked on them explained about the chemistry of cooking.
He managed to make us really feel welcome and spoilt us with excellent recepies that we hope to replicate when we’re home.
What I really liked is that he did not use ingredients that will be impossible to find elsewhere nor that he was too picky in how we cut the onions or tomatoes.
If we come back to Singapore, a lesson with Dhruv will be on our agenda for sure again.

Dhruv has a knack of turning the ordinary into extraordinary. Herbs and spices, along with regular kampong chicken you can find anywhere in Singapore, turned into the most mind-blowing bowl of butter chicken I've ever had in my life. It was great fun learning from him, and he has quite some stories to share. Honestly, he also inspired me to get into the kitchen to cook! I would definitely be back next time!
