They will teach you all the techniques of the past and you will have to prepare everything with them. When every dishes will be ready, the focaccia will be baked in the wood-fired oven and you will have dinner with the products of yourselves made (Focacce, Orecchiette and Formaggio) and also other traditional dishes we will prepare for you. Treasure hunt in the Sassi
We'll meet at the Castello Tramontano and we'll start getting to know to each other. I'll explain you the rules of the game, I'll give you a map with places that you need to visit as well as riddles to solve for each one. You'll need to keep both your legs and head active to solve them in 1 hour and 45 min, but the reward will be worth the effort. Not to mention that, in the research, you will have the opportunity to discover what are, in my opinion, the true gems of the city. While you go searching, I'll stay at the starting point in case you need more hints. At the end of time you'll come back where we first met and together we'll go to a nearby bar where I'll tell you the history of the places you visited. I'll offer you a coffee and together we'll open the treasure chest after decoding the key! Every one of you will receive a certificate of participation, but only the winner will get the treasure! Polignano by boat: cliffs and sea caves!
A fantastic and unforgettable boat trip to discover the breathtaking sea caves and the famous cliff of Polignano a Mare, visiting the whole coastline from North-West to South-East, enjoying especially the view of the sea cave with a restaurant inside "Grotta Palazzese", the islet "Scoglio dell'Eremita" and the beautiful sea cave "Grotta Stampagnata". A unique informal experience taking about 1 hour, with an experienced driver-guide, who will reveal some secrets and legends hidden behind such unique natural beauties. Enjoying the point of view of Polignano from the sea is a wonderful experience not to miss :) Also ideal for groups and teams: please send a message if you have a large group. NB: - YOU WILL RECEIVE A MESSAGE WITH CONFIRMATION ABOUT THE STARTING POINT. You will be fascinated by the anecdotes about how my grandmother prepared the pasta and what the kitchen represented in the past and in part still represent. An immersion in the real life of Puglia and Italian sociology! I will let Elisa, my friend and precous collaborator as a super expert in the Apulian pasta, communicate with the gestures and with the example; she does not speak ehglish but she will always be able to communicate with the heart and experience. And once you will be at home producing your own good food, will be precious the memory of what she showed you. I will instead communicate, if necessary at the same time, in English, Italian and French and you will probably laugh at my flights from one language to another and my role as a "slave in the kitchen of Elisa":-) allows me to tell still so much of Puglia through the many typical objects that I collect at home. The wine, the foods that I serve together with the pasta that we prepare together and that are all local and largely fruit of my organic vegetable garden, do the rest. The lunch that follows is collaborative, all peoples help and, crockery and pans in the hands, all peoples invade my house too, with my great pleasure because this allows me to tell still so much of Puglia through the many typical objects that I collect at home. Making and cooking pasta One by One Homemade orecchiette
Armed with board, flour and water, we will make together with our guests Orecchiette, a typical Apulian pasta shape. We will cook them following the traditional recipes, with fresh scattarisciati tomatoes or with cime di rapa (turnip greens), depending on the season. In addition to ‘’our orecchiette’’, we will taste a typical Salento menu consisting of tarallini, frise, cheese, mozzarella, legumes and vegetables that we could also have the chance to harvest from our home’s garden, depending on availability. There will also be a good bottle of Salento wine on the table and the liqueur made with laurel leaves collected from the great hedge of grandparents’ house. My mother-in-law, Grandma Tetta makes home-made pasta since she remembers it: orecchiette, minchiareddhi, tria, sagne 'cannulate, with love and dedication unchanged over time. Certainly her hands work better than mine and he especially likes to explain this wonderful art to young and old people! You will learn how to made the orecchiette with grandma Tetta a.. a woman of the past, I recommend do not make her angry! Then after the workshop we we ll go on terrace for a tipicalsalentine dinner: from antipasto to sweets, with two kind of pasta: sagne ncannulate e orecchiette. Traditional Puglia cooking class
The cooking class will take place all year round at my family trullo. Here you will take the course either inside an equipped kitchen or outside, under a comfortable wooden patio and you can eat here or in the shade of a centuries-old olive tree. The course will be structured as follows: Welcoming the participants and detailed presentation of the host and the experience; Introduction to the history and gastronomic culture of Puglia; Practical phase which includes three preparations: Preparation of tarallini with wild fennel; Preparation of a typical sweet made with local jams; Preparation of orecchiette with the use of local semolina. At the end of the preparations, the guests comfortably seated at the table under an ancient olive tree (if the course takes place at the trullo) or in a suggestive dining room overlooking the garden, or in the garden itself in favorable weather conditions, will move on to the tasting phase with the following menu: -tarallini and other snacks, -orecchiette topped with meat roll ragout or vegetarian sauce, -the dessert they prepare, -a good glass of wine and a homemade rosolio. Cooking is part of our family traditions. We prepare and cook typical local dishes. Guests are welcome!! You will be the cooks here, preparing orecchiette, sagne, minchiareddrhi under our instructions. You will be equipped with rolling-pins, a table of course, cooking tools and all the ingredients needed in the preparations of our pasta fresca. We will tell you the origins of the different kinds of flours and we will answer all your questions. Then, Pittule will be in turn!! It’s the typical tasty fried food during our Christmas period. We will show you how a Pasticciotto is prepared and you can taste it!! We will hand you a manual with all the recipes written both in Italian and English. Our guests can take everything they have prepared with them, in order to come back home with a little piece of Salento. For me hosting and the house is something else from the simple restaurant that can be hospitable as much as you want but you will never be able to welcome with the serene and informal coexistence of "my house". I relive my grandparents' experiences in the home of my grandparents before and after. Smells from boiling pots, voices and gestures are the same but always different from my mother and aunt who repeat rituals that have marked me unwittingly. Over time, I've accumulated a treasure trove of sensations and knowledge that weave between the countryside and the kitchen, which I am undoubtedly marked. Today, I find recipes and recipes to be seen in an effort to relive that experience: the Cicirata in chicken broth, the marinated soup, the carnival calzoni with pork sauce, the baked cloister, the rich oil, the easter scattered of cardoncelli and many others each of which have its own seasonal location. I also like to rediscover the earth's spontaneous products: marshmallows, chalkboards, cicorielle, sivoni, cardoncelli to be transformed into baked goods with Pezzente salami, meatballs, podolico caciocavallo or simply raffered bread, garlic and oil. Punta Tresino hike and swim, Cilento coast - Agropoli
We will hike from the beautiful Baia di Trentova in Agropoli to Santa Maria di Castellabate passing by Punta Tresino. We can also start our journey from 'zona Lago' north of Santa Maria di Castellabate direction Agropoli, reachable in about 3 hours . The direction to follow is San Giovanni, along via Cozzo Piano Cupo, and always uphill. After approx. 40 min of walk, and even before arriving at the abandoned village of San Giovanni (228 m), from where you can admire a splendid view of Santa Maria di Castellabate, Punta Licosa, the village of Castellabate on the hilltop, and Mount Stella. Continuing towards north, the view opens up more and more on the Bay of Trentova and Agropoli, on Paestum and the Plain of the Sele River, on the Amalfi Coast and Capri. The walk is a moderate level (E) but you need to be moderate fit. We can choose either to make the ring and come back to Agropoli or go directly to Santa Maria di Castellabate, takng the bus back. On the loop hike from Santa Maria, but it's easier to park in Agropoli. Other things to note. The 4ds of the walk are : Duration : 3hours, Difficulty : E, Difference in altitude: almost 250m and distance 12 kms, We can also hike Punta Licosa from San Marco di Castellabate.
